How to avoid soggy buns:
On the buns after they are off the grill put some mayo lightly on them. This not only tastes good, but the fat in the mayo prevents the fat from dripping into the bun and when the burger fat hits the buns, that makes them soggy.
If the onions are making you cry then either soak them or cut them near an open flame.

If this is your first time making a hamburger. Go with the ground chuck and take a minimalist approach using just salt on top of the patties or I guess in the mix. Don’t go too heavy on the salt, you want the salt to lift it up not make it taste salty. You’ll have a good honest, tasty and simple burger that you can figure out how to flavor yourself.
Also I recommend chuck not sirloin, sirloin doesn’t have enough fat to take cooking and will most likely dry up.
