Neighborhood

I mean in a rich neighborhood. Most of the time you see people in those kinds of neigherborhoods in sit down and order type restaurants.

Buffet style used to be very popular, because food was ready.
People could see what they were getting, try different things.
Health & Sanitation regulations have tightened considerably.
In response to many serious food poisoning complaints.
Because the food was not always kept safe & fresh.
Nowadays, a lot of food gets wasted & cannot be served.

Especially in rich neighbourhoods, people like being served.

   I have talked to an owner of a restaurant. They said the food costs are more in a buffet style. But labor cost them more in a sit down.
